Dairy-free Pumpkin “Cheesecake”

My favorite dessert has always been cheesecake. I love its texture, and density, and how it melts in my mouth before I slowly swallow each bite with real pleasure. For me, eating cheesecake is a form of mindfulness practice.

 

Best Ever Cheesecake

I try not to eat many desserts, but I love cheesecakes. I have been attempting many cheesecake recipes, and this one is worth the time and effort. It is so good that you don’t even feel guilty when you eat and enjoy every bite that melts in your mouth.

Super Truffles

I call this recipe “Super Truffles” because these truffles are super healthy, super tasty, and super easy to make. These are very rich and only one or two balls are needed to satisfy your sweet tooth or assuage your afternoon “snack attack.”

Creamy Raspberry Sorbet

This sorbet might be the best dessert you can make on a hot summer day. It is refreshing, flavorful, full of nutrients, and guilt-free! This recipe is super easy to follow and takes 10 minutes to make.

Pumpkin Bread with White Chocolate Chips

My family loves the way this bread tastes and enjoys the aroma in the kitchen while it’s baking. I am happy to serve something that is full of nutrients, as it pairs great with coffee or tea, a midday snack, or after-dinner dessert with a scoop of ice cream. Yum!

Blueberry Chia Pudding

This pudding tastes great for breakfast or afternoon snacks when we crave something sweet and healthy. It can be made in advance and kept in the refrigerator for up to four days.

Chocolate Covered Strawberries

I make these for special occasions and when I want to impress my guests. When arranged on a nice platter, they look delicious and very festive. For extra fun, I serve them with a glass of champagne or wine.

 

Raspberry Chia Jam

This jam is delicious to eat straight from the jar, or as a topping on toast, pancakes, or waffles. It can be made with other berries such as strawberries, blueberries, or huckleberries.  

Cocoa and Chocolate Chip Oatmeal Cake

It is a version of the baked oatmeal recipe with chocolate flavor and powdered sugar to make it look more festive. The size is big enough for the whole family for a few days. It stays fresh for up to five days in the fridge, but it tastes better warmed up in the oven for a few minutes after taking it out of the refrigerator. Banana Bread with Crystallized Ginger

When I bake this bread, the whole house smells amazing. I usually make it when I have bananas that are getting too ripe to eat fresh. Crystalized ginger gives this bread an interesting twist and a bit of extra sweetness. No sugar-added option makes this recipe healthy for anyone who wants to limit their sugar consumption.

 

Wholesome Pumpkin Pie

This pumpkin pie recipe is much healthier and tastier than the traditional one. Each bite feels semi-solid when it touches the tongue, then slowly melts in the mouth before it moves down the throat with warmth and delight from ginger, cinnamon, clove, and nutmeg.

Cranberry Orange Muffins

Cranberries are loaded with healthy nutrients. They are harvested from October to mid-December, available to use in fall and winter recipes. The tart flavor blends with other ingredients in this recipe and gives the muffins a flavorful zing.

Strawberry Cake

Easy and quick recipe for any occasion! It tastes best during spring when fresh strawberries are sweet and flavorful. This cake can be adapted to GF or dairy-free dietary needs without changing the taste or texture.
