Recipe

These are very rich and only one or two balls are needed to satisfy your sweet tooth or assuage your afternoon “snack attack.” Because of their consistency and delicious taste, they encourage slow and mindful eating. This recipe doesn’t contain any sugar or other sweeteners, except for one- to-two dates that can be omitted (for keto diet) and the truffles will still taste great. Ashwagandha* or Maca** are adaptogenic herbs used in Ayurveda for creating hormonal balance, a calm mind, and more energy. These herbs have a slightly bitter taste that gets lost amongst the other ingredients. Collagen powder has no taste but adds nutritional value to an already protein-rich recipe.

Ingredients:

  • 1 cup creamy almond butter (use almond butter that is denser rather than oily and runny)

  • 1 tsp. vanilla extract

  • 2 Tbsp. unsweetened cocoa powder

  • 1 cup unsweetened shredded coconut

  • 2 Tbsp. melted ghee or butter (use coconut oil for a dairy free version)

  • 1 -2 tsp. Ashwagandha or Maca powder

  • 2 Tbsp. unflavored collagen powder

  • 1- 2 dates finally chopped

  • additional cocoa power, chopped almonds, or coconut flakes to sprinkle the truffles

Instructions:

Place all ingredients in a medium-size bowl. Using clean hands mix all ingredients to combine. Place the bowl in the refrigerator for about 30 minutes for the butter to harden enough to shape. Once formed, roll them in shredded coconut, chopped almonds, or cocoa powder. Place the balls on a plate and keep them in refrigerator until ready to eat. Makes about 14-15 pieces.

*Ashwaganda is known for its ability to balance the hormonal and nervous systems by reducing cortisol levels, promoting adrenal health, and reducing blood glucose. It is been applied in Ayurveda for thousands of years and is used mainly for anxiety, depression, and stress-related health problems.

**Maca root comes from Peru where it has been used in cooking and traditional medicine. Maca is mostly known for boosting energy and endurance, improving mood, increasing libido, and some sources promote maca for menopause to
