Beet Hummus

Recipe

This recipe is quick, easy to make, and has a delicious sweet and sour taste. Served with freshly cut vegetables, chips, or crackers, it can impress a crowd at the most festive gathering.

Ingredients:

  • 1 medium beet, roasted and chopped

  •  1 can of chickpeas, drained

  • 2/3 cup tahini

  •   1 small lemon, juiced

  • 1/3 cup olive oil

  • 1-2 cloves of garlic

  • pinch of ground cumin

  • Salt and pepper to taste

  • a handful of chives or other herbs (optional)

Method:

  • Combine all ingredients except for the chives in a food process or a high speed blender and blend until smooth.

  • Add more garlic, lemon, or olive oil if needed.

  • Serve chilled with sliced cucumbers, zucchini, carrots, or your favorite chips or crackers.
