Holiday Breakfast Cookies

These cookies are wholesome and delicious, making them a comforting choice for breakfast with a warm cup of coffee or tea on a chilly holiday morning. Best of all, they come together quickly, so you can enjoy them without much effort.

Ingredients:

  • 1 cup old-fashioned rolled oats (I use sprouted oats for better digestion and nutrient absorption)

  • 1 cup flour of choice (I use sprouted spelt four)

  • 1 large egg

  • 6 TB unsalted butter or coconut oil

  • 1 teaspoon pure vanilla extract

  • 1/2 cup unsweetened dried cranberries

  • 1/3 cup unsweetened shredded coconut

  • 1/4 cup white chocolate chips

  • 1 teaspoon baking soda

  • 1/2 teaspoon sea salt

  • 1/3 cup coconut sugar (or brown sugar)

Method:

  • Preheat oven to 350 F and prepare two cookie sheets

  • Combine flour, baking powder, and salt in a small bowl.

  • In a large bowl whisk sugar, butter, egg, and vanilla.

  • Add the flour mixture to the large bowl together with oats, cranberries, coconut, and white chocolate chips. Stir until well combined.

  • Drop 1-2 TBS of dough on the cookie sheet. Use a spatula to flatten the dough slightly.

  • Bake for about 13-15 minutes until golden brown.
